Come spiegarsi quell’urgenza che ti prende all’improvviso di sfornare una torta? Soprattutto quando ne è vittima una come me che di torte ne preparerà si e no mezza dozzina all’anno??? Com’è o come non è, è così che mi sono svegliata domenica mattina e scesa dal letto sono corsa in cucina a fare l’inventario di cosa ci fosse in casa che potesse prestarsi allo scopo. Da quest’impulso spontaneo è nata la torta che vi racconto qui: piuttosto light e niente affatto stucchevole, come si addice ad un’amante dei dolci ‘poco dolci’ come sono io.
Ingredienti:
- 130 gr mandorle spellate
- 60 gr amaretti secchi
- 100 gr burro a temperatura ambiente (+ una noce per inburrare la teglia)
- 130 gr zucchero
- 4 uova
- 110 gr cioccolato fondente
- 1 pera Kaiser
- la scorza grattugiata di un’arancia
- 2-3 cucchiai di cacao amaro in polvere
Metodo:
- Preriscaldare il forno a 175 C°. Imburrare una teglia a cerniera di 23 cm di diametro. Spolverizzare con 1 cucchiaio di cacao amaro in polvere. Riporre in frigorifero.
- Tritare finemente le mandorle e gli amaretti nel mixer fino ad ottenere una polvere fine e omogenea.
- Trasferire in una ciotola, unire lo zucchero e il burro e montare a crema utilizzando il mixer ad immersione. Unire le uova una per volta. Sciogliere il cioccolato nel microonde o a bagno maria. Unire al composto amalgamendo bene con una spatola. Aggiungere la scorza d’arancia e la pera, precedentemente sbucciata, privata del torsolo e tagliata a brunoise.
- Versare il composto nella teglia e infornare per circa 35 minuti o fino a quando uno stecchino inserito al centro della torta verrà estratto pulito.
- Attendere circa 15 minuti prima di estrarre dalla teglia. Spolverizzare la superficie con abbondante cacao amaro in polvere.
- Lasciare raffreddare e servire.

Be it as it may, that was me when I woke up last Sunday, and as I fell out of bed I ran to the kitchen to take stock of what was in the house that could lend itself to the purpose. From this spontaneous impulse was born the cake that I am going to tell you about here: rather light and not at all cloying, as befits the lover of ‘not too sweet’ desserts that I am.
Ingredients:
- 130 gblanched almonds
- 60 g drymacaroons
- 100 gbutter at room temperature (+ a bit to grease the tin)
- 130 gsugar
- 4 eggs
- 110 gdark chocolate
- 1Conference pear
- gratedrind of one orange
- 2-3tablespoons of unsweetened cocoa powder
Method:
- Preheatthe oven to 175 °. Grease a baking a 23 cm springform cake tin. Sprinkle with 1tablespoon unsweetened cocoa powder. Store in the refrigerator.
- In a foodprocessor, pulse the almonds and amaretti until finely ground.
- Transferto a bowl, add the sugar and butter and beat to a cream using a hand heldblender. Add the eggs one at a time. Melt the chocolate in the microwave or ina double boiler. Add to the mixture stearing well with a spatula. Add theorange zest and pear, previously peeled, cored and finely diced.
- Pour themixture into the cake tin and bake for about 35 minutes or until a toothpickinserted in the center of the cake will come out clean.
- Wait for about15 minutes before removing from pan. Sift plenty of cocoa powder over the topand serve.

mai provata ma penso che mi piacerebbe un sacco, adoro le pere e gli amaretti, per non parlare poi del cioccolato!
